Glycerolipids

Glycerolipids — contains triacylglycerols and monoacylglycerols with saturated and unsaturated fatty acid chains of varying length and degree of unsaturation, ranging from trioleate to tripalmitin. This acylated glycerol structure makes them the principal representatives of the neutral lipid class.

Glycerolipids are used by lipidomics researchers and food chemists as analytical standards for calibrating gas chromatography or LC-MS when determining fatty acid profiles in lipid samples. Compounds such as trioleate and monoolein are also used in emulsion formulation studies and model membrane systems, while long-chain triglycerides such as tribehenin help research into the physical properties of lipids at different temperatures.
